Adventure, good conversation, and amazing food – these are the things that make for a good summer. Which is why I was so excited for Hotel RL’s blogger dinner last week featuring the entirely new menu crafted by Chef Ricky Webster. An eclectic and elegant PNW themed hotel and restaurant? Check. New friends and lots of laughs with other local foodies? Check. The most incredible tasting menu from an even better new Spokane chef? Double Check. If ya’ll haven’t been to Hotel RL lately, you HAVE to go! This is not your typical hotel bar food.

They have recently renovated their lobby and restaurant area (they are working on their rooms too) and it is incredible. Think glamping meets Pier One, but better and more true to our unique Spokane vibe. In addition to the updated aesthetic, their restaurant, aptly named ‘The Restaurant at Hotel RL’,  is entirely new and inspired by local produce and flavors. With this new menu, you can expect a lot of citrus, bright colors, and the incorporation of more fruits and vegetables. Don’t worry if fruits and veggies aren’t your thing, they also have some hearty dishes like “Grown up Mac & Cheese” and a variety of “Street Tacos”.

Of course I wish I could have taken ya’ll, but because I couldn’t, I was sure to take lots of pictures! Every dish was amazing, but some of my favorites included the Roasted Root Hummus, Honey Sriracha Brussels Sprouts, The Hangover Biscuit Sandwich, and the WA Cookie Skillet topped with Ice Cream from Mary Lou’s Milk Bottle. While you’re there, ask about the “Summer Concert Series” every Friday- Saturday night from 6-9 through September. These concerts are free, and you can purchase food from grill outside or enjoy barbecue specials in the restaurant. The August 2017 schedule is posted below:
